Salmon Recipes,
Our smoked salmon can, of course, be enjoyed on its own, with a squeeze of lemon and some brown bread in the classic fashion. That said, there are a number of dishes and tastes that complement the fish beautifully. Below you'll find some of the recipes that we enjoy: we hope you'll enjoy them too.
Timbales of Smoked Salmon:
You will need 6 moulds, about 3 fl.oz capacity
6 thin slices of smoked salmon. [for 6 people]
for filling:
4 ozs. smoked salmon trimmings
1 oz. unsalted butter
5 fl. oz. cream
1 tablespoon horseradish cream
lemon juice
salt and freshly-ground pepper
Blend the trimmings with the unsalted butter in a food processor, add horseradish and
cream, and lemon juice to taste. Check seasoning and do not over process or it will
curdle.
Line moulds with cling film. Fill first with slices of smoked salmon, then add the mousse.
Fold the ends of salmon over to cover the mousse. Cover with cling film and refrigerate
for an hour - or overnight. Serve with an interesting salad of choice and this will make a
delicious starter.
Smoked Salmon with poached eggs and Hollandaise Sauce:
12 slices of smoked salmon [for 6 people]
Delicious for breakfast [or brunch]
Hollandaise Sauce
2 egg yolks, free-range
4 ozs. butter cut in dice at room temperature
1 dessert spoon of cold water
1 tea spoon of lemon juice
Whisk egg yolks thoroughly over very low heat. Add water. Add the butter piece by piece.
Keep whisking all the time. The mix will gradually thicken - if it gets too thick add cold
water judiciously. Finally add lemon juice to taste.
Poach eggs as usual. Place one or two eggs on a plate of smoked salmon, and cover with
sauce. Garnish with chives, dill or parsley.
Creamy pasta with Smoked Salmon:
Cook your favourite pasta in plenty of hot water [salted] until al dente.
8ozs. smoked salmon [sliced into strips]
4 fl. oz. dry white wine
8 fl. oz. double cream
tablespoon of chopped chives
Reduce the wine by about half, by fast boiling. Add cream and chives, and heat through
gently until the mixture thickens slightly. Add strips of salmon, and pour over the
pre-cooked pasta and mix thoroughly. Serve with a salad and some warm crusty bread for a
lovely light lunch.
